It has been many years since I looked at dedicated QRP rigs. I was favourably impressed by the reading i did on this thread:

Hello Craig,
Yes you can add the Elecraft, the new KX2 2016/2017, and since 2012 the KX3 which is more popular, and with more features.
Also the Icom IC-703 + 0 thru 10 watts out (discontinued) but sometimes avalaible on EBAY or some flea markets.
The plus model has 6 meters along with HF, and it is the second version. It has a built-in antenna tuner exactly the same as the one in the elecraft it is a 10:1.
Here I<m using the FT-817ND and the Icom IC-703 Plus for nearly 10 years now. plus the Elecraft KX3 which belong to my XYL VE2RH, who like to pound the brass (CW)
We loved both 3 of them, and have lot of fun operating portable and at home as well.
Let us know of your choice, it is not easy, and it needs a good study and comparaisons before buying.

...I decided to start with the uBITX (http://www.hfsignals.com (http://www.hfsignals.com))...a build that's not a real build...an assembly let's say...but intriguing...
...and I believe that soon I will go with the LNR LD-11
...and start working through some other kits...whittling them down
...also it makes a lot more sense to me to start with the cw qrp rigs and add this amp - (https://www.wimo.com/amplifier-hf-transistor_e.html#HLA150-PLUS (https://www.wimo.com/amplifier-hf-transistor_e.html#HLA150-PLUS)) than to buy a full power rig which already has too many accessories and have to dial it down...
...seems like a thoroughly European thing to do, hey?

Also A&A engineering had a 40,20 and 30 meter model CW only and puts out about 4 watts.

Don't forget the Elecraft K2(10W) transceiver. That is my principal rig these days. Except when I run the IC-7200 at 5 watts. I had a TS-120V and 130V ten-watter radios. Lovely rigs now gone.
